Ratatouille in France

 


Ratatouille with fresh goat cheese

When I was at the market on Sunday I picked up some eggplant, tomatoes, zucchini. I also bought some fresh goat cheese and chorizo.

I knew I wanted to make ratatouille, and I thought the chorizo would make a good starting point, so I broke it up and sauteed it over medium high heat. 


Once it was part way cooked, I added chopped carrot, onions and garlic. 

Then chopped zucchini, eggplant, tomatoes and peppers.
The tomatoes were just glorious.
I let everything simmer and threw in a few herbs: thyme, fresh basil and bay leaf.

This goat cheese from the market tastes very fresh. It is not tart and it's a lot lighter in texture. It tasted wonderful on top of the ratatouille.
