Ratatouille with fresh goat cheese
When I was at the market on Sunday I picked up some eggplant, tomatoes, zucchini. I also bought some fresh goat cheese and chorizo.
I knew I wanted to make ratatouille, and I thought the chorizo would make a good starting point, so I broke it up and sauteed it over medium high heat.
Once it was part way cooked, I added chopped carrot, onions and garlic.
Then chopped zucchini, eggplant, tomatoes and peppers.The tomatoes were just glorious.This goat cheese from the market tastes very fresh. It is not tart and it's a lot lighter in texture. It tasted wonderful on top of the ratatouille.
